Orange and Gingerbread Cheesecake
A delightful and festive dessert that combines the freshness of orange with the warm, spicy flavors of gingerbread.

Cooking time:45 min + 4h in fridge
Cheesecake:
250 g white chocolate
100 g butter or margarine
40 pcs gingerbread cookies
400 g cream cheese
2 dl quark (10%)
1 dl sugar
2 oranges (zested)
Garnish:
White chocolate (see above)
6–8 gingerbread cookies (Orange)
1 package candied orange peel (100g)
2 dl heavy cream
Chocolate-Dipped Gingerbread Cookies:
1. Melt the white chocolate in a water bath and then remove from heat.
2. Dip the gingerbread cookies to be garnished in the melted chocolate and sprinkle some pieces of candied orange peel on top. Place them on a baking sheet and let cool (refrigerate if they do not harden).
Cheesecake:
3. Melt the butter/margarine.
4. Crush the gingerbread cookies in a mortar or process in a food processor into crumbs.
5. Mix crumbs with the melted butter. Press the mixture to cover the bottom of a round form with a removable edge about 24–26 cm in diameter. Chill.
6. Mix cream cheese, quark, and sugar. Grate in the orange zest. Gradually add the remaining melted white chocolate, stirring constantly.
7. Fill the form with the mixture and chill in refrigerator for about 4 hours.
8. Take out the cheesecake about 30 min before serving. Garnish with chocolate-dipped gingerbread cookies and whipped cream.
